Ingredients
  • 1/2 tsp baking soda .
  • 1 c garbanzo flour (chickpea) .
  • 1/2 c gluten-free margarine .
  • 1/2 c brown sugar .
  • 1/2 c salted natural-style peanut butter .
  • 1/4 c tapioca flour .
  • 1/4 c potato starch .
  • 1 egg .
  • 1/2 c white sugar

Directions
  • Step #1 Preheat oven to 375.
  • Step #2 Make sure you have beaters that can handle thick batter.
  • Step #3 In a medium bowl, cream margarine & sugars.
  • Step #4 Beat in egg & peanut butter.
  • Step #5 In a separate bowl, mix flours & baking soda evenly.
  • Step #6 Add in two parts to wet ingredients, beating on med-high speed until thoroughly mixed.
  • Step #7 Roll dough into 1-inch balls, & place 2 inches apart onto ungreased baking sheet.
  • Step #8 You can press them with a fork if desired, but not necessary.
  • Step #9 Bake 8-10 mins.
  • Step #10 Let cool 5 mins before removing from baking sheet.
