Regina's Bobka Recipe

Ingredients
  • 1/2 c sugar .
  • 2 1/2 c flour .
  • 3 egg whites .
  • 2 tbsps sugar .
  • 1/4 tsp salt .
  • Merinque .
  • 2 (1/4 oz) packages dry yeast (about 2 Tbsp) .
  • 1/2 lb butter .
  • 1/2 c sugar .
  • 3 egg yolks .
  • 1 tsp cinnamon .
  • 1/4 c warm water .
  • 1/2 c milk .
  • 1 c water .
  • 1 grated lemon, rind of .
  • Batter .
  • 1 c golden raisins .
  • Filling .
  • 1 c walnuts, sliced

Directions
  • Step #1 For the batter, heat the butter & milk until the butter melts.
  • Step #2 Set aside to cool.
  • Step #3 Sift the flour into a large bowl with the salt & sugar.
  • Step #4 Dissolve the yeast in the water & mix in the egg yolks.
  • Step #5 Stir the cooled milk & butter mixture into the flour & then add the yeast mixture.
  • Step #6 Mix well & put in the fridge, covered, overnight or for at least 12 hrs.
  • Step #7 Refrigerate the egg whites.
  • Step #8 For the filling, mix the water & 1/2 c sugar in a saucepan & bring to a boil.
  • Step #9 Add the rest of the filling ingredients & cook on low heat until thick, about 10 mins.
  • Step #10 If you make the filling in advance, put in the fridge it.
  • Step #11 To assemble the bobka, bring the egg whites to about room temp.
  • Step #12 Beat the whites until foamy, & while stir beating, slowly ad 1/2 c sugar until peaks form.
  • Step #13 Preheat the oven to 350°F.
  • Step #14 Remove the dough from refrigerator just before you roll it out.
  • Step #15 Divide the dough in half.
  • Step #16 One a well-floured surface with a floured rolling pin, roll each half into a 12*24 inch rectangle.
  • Step #17 Work quickly because the dough will become sticky & difficult to work with as it warms up.
  • Step #18 Spread half he meringue & then half of the filling on each recangle to within 1 inch of the sides.
  • Step #19 Roll the long side up like a jelly roll & seal the short ends together.
  • Step #20 Place on roll inside a greased bundt pan.
  • Step #21 Lay the other roll on top.
  • Step #22 Bake for 45-60 mins, until firm & almost bread-like on top.
  • Step #23 Let the bobka cool.
  • Step #24 Turn it out onto a plate, put a serving plate on top, & reverse the cake to its original position.
