1/2 c blueberries (fresh or semi-defrosted, use no more than 1/2 c or the pancakes will not have a good texture) .
2-3 tbsps melted butter .
1 egg
Directions
Step #1 Generously grease a frypan or griddle.
Step #2 In a large bowl, mix the flour, baking soda, baking powder, salt & sugar (if you prefer a really sweet pancake just add in another tbsp of sugar) together in a bowl.
Step #3 In another bowl whisk together egg, buttermilk, sour cream & melted melted butter until well mixd.
Step #4 Add the buttermilk mixture to the dry ingredients; whisk/mix to mix.
Step #5 Fold in the blueberries.
Step #6 Drop about 1/4 c (can use more batter if desired) onto hot frypan or griddle, & fry until underside is brown & the edges begin to bubble.
Step #7 Turn over pancake with a spatula, & continue baking for a couple of mins.
Step #8 Top with sour cream mixed with brown sugar, or drizzle maple syrup or blueberry syrup over top.
