Bread "gnocchi" Recipe

Ingredients
  • 2 tbsps butter .
  • 3 tbsps extra-virgin olive oil .
  • salt & freshly ground black pepper .
  • 2 c tomato sauce .
  • 3 fresh basil leaves, torn .
  • 2 c shredded mozzarella cheese (or any cheese you have on hand, provolone is a great choice) .
  • 4 garlic cloves, finely sliced .
  • 3 small tomatoes, seeded & sliced .
  • 8 slices bread, thick slices (French or Italian, stale bread works well)

Directions
  • Step #1 Preheat broiler.
  • Step #2 Heat a large pan over med-heat/flame.
  • Step #3 Chop bread into bite size pieces.
  • Step #4 Add olive oil, butter & garlic to the skillet.
  • Step #5 Melt butter into oil then add the bread.
  • Step #6 Spice up the bread with salt & pepper.
  • Step #7 Toss & cook the bread 7 to 8 mins then add the tomato sauce & fresh tomatoes.
  • Step #8 Turn to coat & warm the tomato sauce, 3 to 4 mins.
  • Step #9 Remove the bread gnocchi & tomatoes from heat & transfer to a casserole dish, top this with basil then cover the dish with cheese.
  • Step #10 Place the casserole under the broiler & cook 2 to 3 mins, until the cheese browns & bubbles.
  • Step #11 Serve as soon as possible.
  • Step #12 Sometimes I'll add some extra ingredients at the beginning depending on mood & what I have on hand.
  • Step #13 I made this with bacon & mushrooms last night.
