Step #1 Preheat oven to 350.
Step #2 In a mixing bowl, mix eggs, tomato paste, seasoning salt & pepper.
Step #3 Stir in green pepper, onion & celery.
Step #4 Add beef & croutons.
Step #5 Mix thoroughly with hands.
Step #6 In a shallow baking pan form mixture into a loaf.
Step #7 Cover up loosely with foil wrap.
Step #8 Bake for 55-65 mins until juices run clear.
Step #9 Remove foil wrap halfway through cook time.
Step #10 Let stand five mins before serving.
Step #11 Note: I often substitute ketchup for the tomato paste with no effect on the taste.
