Fresh Tuna Steaks On A Bed Of Couscous Recipe

Ingredients
  • 2 large plum tomatoes, seeded & sliced & then crushed or 1 c canned tomatoes, drained well & then crushed .
  • 2 garlic cloves, minced .
  • salt & pepper .
  • fresh basil (to garnish) .
  • 4 tbsps Italian parsley, minced .
  • 14 oz chicken broth, canned or homemade chicken stock .
  • 6 fresh tuna steaks, cut one inch thick .
  • 1/2 c bell peppers, sliced yellow .
  • 1/4 c fresh basil, minced or 1 1/2 tsps dried basil .
  • olive oil (to garnish) .
  • 1/2 c dry white wine .
  • 1 medium onion, minced .
  • 1 tsp capers, rinsed well .
  • 2/3 c kalamata olives, pitted & coarsely sliced .
  • 10 oz chickpeas, canned & drained .
  • 5 spring green onions, sliced .
  • 5 tbsps olive oil .
  • 10 oz couscous .
  • 1/2 tsp fresh grated lemon zest

Directions
  • Step #1 In a medium pot place the chicken broth over med-heat/flame & bring to a boil.
  • Step #2 Add the uncooked couscous, sliced green onion, sliced bell pepper, grated lemon zest, & chick peas.
  • Step #3 Stir all well.
  • Step #4 Cover up & remove this from heat.
  • Step #5 Set aside.
  • Step #6 Heat 4 tbsps olive oil In a large-ish frypan.
  • Step #7 Add the fish steaks in a single layer not touching, sprinkle the minced onion & parsley all around & on the tops.
  • Step #8 Sear the fish about one min on each side, just so the flesh tightens up & whitens.
  • Step #9 Using a large turn slip under & turn over carefully.
  • Step #10 Turn the heat to medium low.
  • Step #11 Sprinkle top on the minced garlic & about 3 tbsps white wine, & the minced basil leaves.
  • Step #12 Sprinkle top with salt & pepper lightly.
  • Step #13 Keep uncovered & cook another two mins on each side.
  • Step #14 Fish should be opaque but not dry.
  • Step #15 Place steaks onto a heated platter.
  • Step #16 Turn the heat up under the frypan & add in the remaining white wine.
  • Step #17 Scrape bottom of pan to get all the bits up.
  • Step #18 Add the tomato, olives, capers & toss over the high heat.
  • Step #19 Fluff the couscous with a fork, & place on a large platter.
  • Step #20 Place the tuna steaks nicely on top of all the couscous.
  • Step #21 Pour the tomato mixture over the tuna & couscous.
  • Step #22 Sprinkle top with some fresh sliced basil & the last of the olive oil.
  • Step #23 Can also sprinkle with a few red pepper flakes.
  • Step #24 Serve while hot.
  • Step #25 A nice fresh green salad & glass of wine is all you need to complete the meal.
