Step #2 Line a shallow baking pan with foil wrap, set aside.
Step #3 Cut carrots into 1 1/2 inch thick slices; if the carrots are thick you might want to cut in half lenghtwise before slicing to promote even roasting.
Step #4 Place the cut carrots on prepared pan, toss with 2 tbsps of the dressing.
Step #5 Cover up with foil wrap & bake for 20 mins.
Step #6 Remove foil wrap, stir & continue to bake an extra 20 to 25 mins or until carrots are crisp-tender, stirring every once in awhile.
Step #7 Just before serving, toss with remaining dressing & cheese.
