Chicken In A Pot, No Pie Recipe

Ingredients
  • 1 tbsp extra-virgin olive oil, 1 turn of the pan .
  • 2 carrots, peeled & sliced .
  • 2-3 tbsps fresh tarragon, 4 to 5 sprigs, sliced .
  • 1 tsp poultry seasoning .
  • 1 c frozen peas, a couple of handfuls .
  • 1 bunch pencil asparagus, trimmed of woody ends & cut into 2-inch pieces .
  • 2 celery ribs, with leafy green tops finely sliced .
  • 3 tbsps all-purpose flour .
  • 2 tbsps butter, cut into pieces .
  • 1 c dry white wine, eyeball it .
  • 2 starchy potatoes, skin left on & sliced (recommended ( Idaho) .
  • 1 medium onion, sliced .
  • 5 c chicken stock .
  • 1 1/2 lbs chicken tenders, sliced .
  • salt & pepper .
  • 1 bay leaf

Directions
  • Step #1 Heat a large, deep skillet or a medium soup pot over medium high heat.
  • Step #2 Add extra-virgin olive oil & butter.
  • Step #3 Melt butter into oil then add the potatoes, celery & carrots, onions, adding them to the pot as you chop them.
  • Step #4 Add bay leaf & season veggies with salt, pepper & poultry seasoning, cook 5 to 6 mins to soften them a bit.
  • Step #5 Add flour & cook another min then whisk in wine & cook off a min more.
  • Step #6 Add stock & put a lid on the pan or pot & raise heat to bring to a quick boil.
  • Step #7 Slide in chicken & cook 5 mins.
  • Step #8 Stir in asparagus & cook 3 mins more.
  • Step #9 Turn off heat & add the peas & tarragon.
  • Step #10 Stir to mix & adjust salt & pepper, to your taste.
  • Step #11 Ladle into bowls & serve this with crusty bread for mopping.
