Tasty Breakfast Granola Recipe

Ingredients
  • 1/2 c sliced dried dates .
  • 1/2 c almonds .
  • 1/2 c sliced dried apricots .
  • 1/2 c dried cranberries .
  • 1 tbsp vanilla extract .
  • 1/2 tsp salt .
  • 1/4 c cashew nuts .
  • 1/2 c pecans .
  • 1/2 c honey .
  • 1 c firmly packed golden brown sugar .
  • 1/2 c sultanas .
  • 3/4 c vegetable oil (such as canola or safflower) .
  • 8 c old fashioned oats .
  • 1/4 c macadamia nuts .
  • 1/2 c sweetened flaked coconut .
  • 1/2 c sunflower seeds

Directions
  • Step #1 Preheat oven to 325*F.
  • Step #2 In a large saucepan set over med-heat/flame, mix the oil, brown sugar, honey, vanilla & salt.
  • Step #3 Stir until the sugar dissolves, about 3 mins.
  • Step #4 In a large bowl, sunflower seeds, mix the oats, coconut, & nuts.
  • Step #5 Pour the warm oil & honey mixture into the oat mixture & stir well until mixd.
  • Step #6 Spray two 12 by 17 inch rimmed baking sheets with non-stick cooking spray.
  • Step #7 Spread the mixture evenly between the two pans.
  • Step #8 Bake for 30 mins, stirring several times, until the granola is a deep golden brown.
  • Step #9 Cool completely before adding the dried fruit.
  • Step #10 Store in an airtight container up to 3 weeks.
  • Step #11 I often halve this recipe as I would rather make it up fresh every two weeks.
