Refrigerator Pickled Zucchini Ribbons Recipe

Ingredients
  • 1 c onions, thinly sliced .
  • 1 c cider vinegar .
  • 2 tsps salt .
  • 1 c water .
  • 8 fresh dill sprigs .
  • 1 tsp turmeric .
  • 1/2 tsp crushed red pepper flakes .
  • 1 tsp mustard seeds .
  • 3 garlic cloves (with peel left on) .
  • 1/4 c sugar .
  • 3 medium zucchini (about 1-1/2 lbs, thinly sliced lenfgwise)

Directions
  • Step #1 Combine first nine ingredients in a medium saucepan; bring to a boil.
  • Step #2 Reduce heat & let simmer uncovered 15 mins.
  • Step #3 Combine zucchini & onion In a large-ish bowl & pour hot vinegar mixture over vegetables.
  • Step #4 Cover up & let this stand at about room temp for 3 hrs.
  • Step #5 Refrigerate for a minumum of 8 hrs before using.
  • Step #6 Store covered in refrigerator for up to 4 weeks.
