Bruschetta-style Salsa For Canning Recipe

Ingredients
  • 1 tbsp red wine vinegar .
  • 2 green onions, minced .
  • 1 tsp lemon juice .
  • 3 tbsps tomato paste .
  • 2 large garlic cloves, minced .
  • 1/4 tsp ground black pepper .
  • 1/2 tsp pickling salt .
  • 2 shallots, minced .
  • 1 c fresh basil, sliced .
  • 3 c peeled sliced Italian plum tomatoes (about 1/4 lbs.)

Directions
  • Step #1 Drain tomatoes then mix with garlic, shallots, vinegar, lemon juice, basil, salt & pepper In a large-ish saucepan.
  • Step #2 Bring to a boil over high heat, reduce heat & boil carefully 5 mins.
  • Step #3 Check consistency, you may need to simmer awhile longer.
  • Step #4 Stir in green onions & tomato paste & boil one min.
  • Step #5 Ladle into hot sterilized jars to within 1/2 inch of top.
  • Step #6 Process in a hot water bath for 35 mins for half pints, 40 mins for pints.
  • Step #7 To serve, spoon out onto sliced bread, top this with your favourite cheese & broil until cheese is melted.
