Ginger Ice Cream Recipe

Ingredients
  • 1 c heavy cream .
  • 1/3 c sugar .
  • 3 egg yolks .
  • 1/2 c water .
  • 1 1/4 c milk .
  • 2 tbsps grated peeled fresh gingerroot .
  • 1 tbsp finely sliced crystallized ginger .
  • 1/3 c sugar

Directions
  • Step #1 Simmer the water, sugar & ginger for 3-4 mins in a saucepan, stirring every once in awhile to make a light syrup.
  • Step #2 Set aside & cool for 5 mins.
  • Step #3 In another saucepan, scald the milk & cream.
  • Step #4 Remove from heat & stir in the 1/3 c sugar & the ginger syrup.
  • Step #5 Set aside for 15 mins to let flavors mix.
  • Step #6 Strain the ginger solids from the milk mixture & discard.
  • Step #7 Whisk in the egg yolks & crystallized ginger.
  • Step #8 Return to heat, either in a double boiler or heat diffuser.
  • Step #9 Heat carefully, stirring constantly, until the mixture becomes a thin custard.
  • Step #10 It will thicken slightly but should not be heated to a simmer or boil.
  • Step #11 Cool & prepare according to your ice cream maker instructions.
