Pineapple-apricot Jam Recipe

Ingredients
  • 1 (6 oz) package orange flavor gelatin .
  • 1 (20 oz) can crushed pineapple in syrup .
  • 2 c sugar .
  • 8 oz dried apricots (slice very thin)

Directions
  • Step #1 Wash four 1/2 pint jars, lids & bands in hot soapy water, rinse well with warm water.
  • Step #2 Submerge in boiled water, off heat, until ready to use.
  • Step #3 Mix pineapple with syrup, apricots, & sugar in large pan.
  • Step #4 Bring to boil, stirring every once in awhile, reduce heat & let simmer 10 mins.
  • Step #5 Stir in gelatin & let simmer 10 mins longer, stirring every once in awhile.
  • Step #6 Skim off an foam with metal spoon.
  • Step #7 Ladle quickly into prepared jars, filling to within 1/8 inch of top.
  • Step #8 Wipe jar rims & threads with wet cloth.
  • Step #9 Cover up jars with lids & screw bands on tightly.
  • Step #10 For water bath, place jars in boiling water for 10 mins.
  • Step #11 Water should be 1-2 inches above jars.
  • Step #12 Allow to cool & check lids.
  • Step #13 They should be concave & not pop up when pressed in the center.
  • Step #14 Refrigerate after cooling if not using the water bath.
