Roast Pears With Pecans And Apple Butterscotch Sauce Recipe

Ingredients
  • 3 tbsps apple juice .
  • 3 tbsps double cream .
  • 4 pears, peeled, quartered & cored .
  • 2 tbsps calvados .
  • 55 g soft light brown sugar .
  • 55 g butter, sliced .
  • 85 g pecan nuts

Directions
  • Step #1 Preheat the oven to 180C/350Fgas mark 4.
  • Step #2 Put the pears into a roasting pan & cover with the butter, sugar & apple juice.
  • Step #3 Put the roasting pan into the centre of the oven & roast for 20 mins, basting every once in awhile.
  • Step #4 Add the pecans & Calvados & continue to cook for a further 10 - 15 mins or until the pears are tender & the butter & sugar caramelised.
  • Step #5 Remove the pears from the pan & keep warm.
  • Step #6 Add the double cream to the sauce & stir until well mixed together.
  • Step #7 If the sauce looks as though it might curdle, add a tbsp or two of very cold water & stir in theto the sauce until it is thick & shiny.
  • Step #8 Divide the pears between four serving plates or bowls & pour the warm butterscotch sauce over them.
  • Step #9 Serve as soon as possible with a good quality vanilla ice cream.
