Mititei (small Ground Beef Sausages) Recipe

Ingredients
  • 2 lbs lean ground beef .
  • 1 tsp caraway seeds .
  • 1/2 tsp red pepper flakes, crumbled .
  • 1/2 tsp dried thyme .
  • salt & freshly ground black pepper .
  • 3 garlic cloves, peeled & crushed into a paste .
  • 2 tbsps extra-virgin olive oil .
  • 1/2 tsp paprika (hot or sweet(your choice) .
  • 2 tsps baking soda

Directions
  • Step #1 Combine beef, paprika, red pepper, thyme, caraway seeds, baking soda, oil, garlic, & 2 tbsps water In a large-ish bowl.
  • Step #2 Spice up with salt & pepper & knead for 5 mins, wetting your hands frequently to help keep mixture moist.
  • Step #3 Cover up bowl & put in the fridge for at least 5 hrs.
  • Step #4 With wet hands, roll meat, 1 tbsps at a time, into small balls, then shape balls into sausages about 3'' long & 1'' thick.
  • Step #5 Heat a grill pan over med-heat/flame.
  • Step #6 Cook sausages in batches, turning frequently, until well browned & cooked through, about 10 mins.
  • Step #7 Serve as an hors d'oeuvre or with potatoes as an entrée.
