Pasta Shrimp Newburg Recipe

Ingredients
  • 12 oz farfalle pasta (bow-tie) .
  • 12 oz raw deveined peeled medium shrimp .
  • 1 tbsp butter .
  • 1 (14 1/2 oz) can sliced tomatoes with juice, drained, juice reserved .
  • Sauce .
  • 1/2 c dry sherry .
  • thinly sliced white & green part scallions .
  • 3/4 c bottled alfredo sauce .
  • 1 bunch about 1 lb asparagus, woody ends snapped off, spears cut in 2-in . lengths

Directions
  • Step #1 1.
  • Step #2 Bring a large pot of lightly salted water to a boil.
  • Step #3 Add pasta & cook as package directs, adding asparagus 6 mins before pasta will be done.
  • Step #4 2.
  • Step #5 Meanwhile heat butter In a large-ish nonstick skillet over medium-high heat.
  • Step #6 Add shrimp; sauté 3 to 4 mins until cooked through.
  • Step #7 Remove with a slotted spoon to a plate.
  • Step #8 3.
  • Step #9 Add sherry & white part of scallions to skillet.
  • Step #10 Bring to a boil, reduce heat & let simmer uncovered until liquid is reduced by half.
  • Step #11 Add Alfredo sauce & reserved juice from tomatoes; stir until mixed & hot.
  • Step #12 4.
  • Step #13 Drain pasta & asparagus; return to pot.
  • Step #14 Add Sauce, shrimp & tomatoes; toss to mix & coat.
  • Step #15 Sprinkle top with green part of scallions.
