Peach-bourbon Wings Recipe

Ingredients
  • 1 tbsp water .
  • 1/4 c bourbon (or rum) .
  • 1 c peach preserves .
  • 4 lbs chicken wings .
  • 1/4 c white vinegar .
  • 1/2 tsp salt .
  • 2 tbsps packed dark brown sugar .
  • 2 garlic cloves, peeled .
  • 2 tsps cornstarch, stirred into

Directions
  • Step #1 Heat oven to 450 degrees, line a 15 X 10-inch jelly roll pan with non-stick foil wrap.
  • Step #2 In a food processor/blender, mix preserves,brown sugar, garlic & salt; process until garlic is finely sliced.
  • Step #3 Remove to a small saucepan, stir in the vinegar & bourbon; bring to a simmer over med-heat/flame; cook 5 mins.
  • Step #4 Add cornstarch-water mixture to saucepan; cook 2 mins or until thickened(you will have about 1 1/2 c glaze).
  • Step #5 Cut wing tips off & discard; cut wings in half at joint for about 36 pieces.
  • Step #6 Place on prepared pan; remove 1/2 c peach-bourbon glaze & set aside; brush wings with 1/2 c of glaze, roast at 450 degrees for 15 mins.
  • Step #7 Remove pan from oven; with tongs ,turn wings over; brush with remainind glaze; roast 15 mins more,until juices run clear.
  • Step #8 To crisp skin, serve this with reserved glaze, increase oven temperature to broil; broil wings for 2 to 4 mins, enjoy.
