Australian Oysters In Champagne Sauce Recipe

Ingredients
  • 2 tbsps leeks, finely grated .
  • 1/2 lime, juice of .
  • pepper .
  • 16 oysters .
  • 1/4 c cream .
  • 3 tbsps butter .
  • salt .
  • 1/4 c champagne

Directions
  • Step #1 Remove oysters from their shell.
  • Step #2 Set shells aside.
  • Step #3 Pour champagne into a small frying pan & bring to the boil.
  • Step #4 Add leek & oysters & stir for 30 seconds.
  • Step #5 Remove oysters.
  • Step #6 Add the cream to the pan & bring to the boil.
  • Step #7 Gradually add salt, lime juice & butter, pepper, stirring continously.
  • Step #8 Return the oysters to the pan until they are just heated through.
  • Step #9 Fill each oyster shell with one oyster & sauce.
  • Step #10 Serve with lime wedges & lettuce.
