Tuna Risotto Napolitana Recipe

Ingredients
  • salt & fresh ground pepper .
  • 3-4 c chicken stock or vegetable stock .
  • 1 garlic clove, sliced .
  • 1-2 chili pepper, deseeded & sliced .
  • 1 lemon rind, & juice of .
  • 1 onion, sliced .
  • 2 tbsps olive oil .
  • parmesan cheese (optional) .
  • 1/4 c black olives, sliced .
  • 1/2 c fresh herbs, sliced (of your choice) .
  • 1/4 c sun-dried tomatoes, sliced .
  • 1 c arborio rice .
  • 425F g tuna, flaked

Directions
  • Step #1 Heat stock in a saucepan & keep on the plate next to where you are making your rice.
  • Step #2 Keep hot.
  • Step #3 Heat oil in frying pan & add onion & garlic.
  • Step #4 Saute until soft.
  • Step #5 Stir in rice & cook 3 mins until grains are coated with oil.
  • Step #6 Add 1 c stock & stir until liquid is absorbed.
  • Step #7 Continue stirring in remaining stock 1 c at a time until rice is tender & mixture is creamy.
  • Step #8 If rice is cooked after 3 c don't add the 4th.
  • Step #9 Fold in tuna, lemon rind & juice, semi-dried tomatoes, herbs, olives, chilli & seasoning.
  • Step #10 To serve place paremsan shavings on top, extra sliced herbs & if desired a drizzle of olive oil.
