Ginger Drop Cookies Recipe

Ingredients
  • 2 eggs .
  • 2 tsps baking soda .
  • 1 c sugar .
  • 1 tsp cinnamon .
  • 1 tsp salt .
  • 1 c molasses .
  • 4 1/4 c flour .
  • 1/4 tsp nutmeg .
  • 1 tbsp ginger .
  • 10 tbsps butter, room temperature .
  • 1/4 tsp cloves

Directions
  • Step #1 In a large bowl of an electric mixer, cream butter, sugar & molasses.
  • Step #2 Beat in eggs one at a time.
  • Step #3 Beat in remaining ingredients but don't over mix.
  • Step #4 Refrigerate dough, covered, for one hr.
  • Step #5 Preheat oven to 400-degrees F.
  • Step #6 Line baking sheets with parchment paper or wax paper.
  • Step #7 Form dough into 1 1/2 inch balls.
  • Step #8 Arrange balls on prepared cookie sheets, spacing one inch apart.
  • Step #9 Flatten cookies with a floured fork.
  • Step #10 Bake for 8-10 mins or until done & firm to touch.
  • Step #11 Let cool on cooling rack before serving.
