Chicken Livers With Gorgonzola Polenta Recipe

Ingredients
  • 1 lb chicken livers, trimmed & sliced
  • 1 c white wine
  • 2 tbsps olive oil
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 4 oz Gorgonzola cheese, crumbled
  • 2 c chicken stock
  • salt & pepper to taste
  • 4 cloves garlic, minced
  •  
  • 7 mushrooms, sliced
  • 3/4 c milk
  • 1 c dry polenta
  • 1 (14.5 oz) can peeled & sliced tomatoes, drained

Directions
  • Step #1 Heat olive oil in a large skillet over med-heat/flame.
  • Step #2 Add the onion & bell pepper, & season this with a little salt & pepper.
  • Step #3 Cook, stirring frequently, until tender.
  • Step #4 Add mushrooms & garlic to the skillet, & cook for a few mins until fragrant.
  • Step #5 Move the vegetables to the sides of the skillet, & add the chicken livers.
  • Step #6 Cook livers for 5 mins, turning frequently.
  • Step #7 Stir tomatoes & wine into the skillet, & turn the heat to medium-high.
  • Step #8 Simmer for 20 mins, or until most of the liquid is gone.
  • Step #9 Taste & season this with salt & pepper.
  • Step #10 Meanwhile, pour chicken stock into a saucepan, & bring to a boil.
  • Step #11 Slowly pour in polenta while stirring vigorously.
  • Step #12 Cook for a few mins, then stir in the milk.
  • Step #13 Reduce heat to low, cover & let simmer for about 5 mins, until thick.
  • Step #14 Stir gorgonzola into the polenta until melted.
  • Step #15 Spoon polenta onto plates, & cover with the chicken liver sauce.
