Canadian Bacon And Cheddar Cheese Flan Recipe

Ingredients
  • 1 quart heavy cream .
  • 5 oz thickly sliced Canadian bacon, cut into 1/2-inch dice (1 c) .
  • 6 oz sharp cheddar cheese, shredded (2 c) .
  • 2 tbsps unsalted butter .
  • 10 large eggs .
  • 1 1/2 tsps fresh ground pepper .
  • 2 tbsps sliced flat leaf parsley .
  • 1 tsp kosher salt .
  • 1/2 lb white mushrooms, stems discarded, caps thinly sliced .
  • cayenne pepper

Directions
  • Step #1 Preheat the oven to 350°.
  • Step #2 Butter a 9-by-13-inch glass baking dish.
  • Step #3 In a large skillet, melt the butter.
  • Step #4 Add the mushrooms & cook over moderate heat until their liquid evaporates, about 5 mins.
  • Step #5 Raise the heat to moderately high & cook, stirring, until browned, about 3 mins.
  • Step #6 Transfer the mushrooms to the prepared baking dish.
  • Step #7 Toss the bacon, parsley & pepper in the baking dish, then spread in an even layer.
  • Step #8 In a large bowl, whisk the eggs well.
  • Step #9 Whisk in the cream, salt & a pinch of cayenne.
  • Step #10 Slowly pour the custard over the mushrooms & bacon & sprinkle the cheese over the top.
  • Step #11 Bake the custard for 50 mins, or until just set.
  • Step #12 Transfer to a rack to cool for 15 mins, then cut into squares & serve hot or warm.
