Real Hot Pepper Chutney Recipe

Ingredients
  • 3 small garlic cloves, minced .
  • 1/2 c brown sugar (packed) .
  • 1/2 c white sugar .
  • 4 fresh jalapeno peppers .
  • 1 green bell pepper, cored & seeded .
  • 3/4 c white wine vinegar .
  • 1 red bell pepper, cored & seeded .
  • 1/2 c golden raisins .
  • 1/2 c crystallized ginger, slivered

Directions
  • Step #1 Cut each bell pepper into 8 long strips.
  • Step #2 Cut the strips crosswise into 1/4" wide slices.
  • Step #3 Remove the stems from the jalapenos & cut them in half lengthwise.
  • Step #4 Cut them crosswise into 1/4" thick slices(with seeds if you want this HOT).
  • Step #5 Stir the peppers & all the remaining ingredients together in a 4 quart microwave safe casserole.
  • Step #6 Cook, at full power(650-700 watts) until thick, uncovered, 20 mins.
  • Step #7 If using the stove to cook, place all the ingredients In a large-ish saucepan, & bring to a boil.
  • Step #8 Lower the heat & cook 30-45 mins, until thick.
  • Step #9 This keeps in the fridge up to two weeks, covered.
  • Step #10 Makes 2 1/2 c.
  • Step #11 You may place this in a canning jar, seal, & process for 10 mins in a boiling water bath.
