Mexican Lasagna Recipe

Ingredients
  • nonstick cooking spray .
  • 1 (12 oz) can sliced tomatoes with green chilies .
  • 1 egg, beaten .
  • 1 1/2 c low fat cottage cheese .
  • 1/4 c water .
  • 1/4 c parmesan cheese .
  • 1 (1 1/4 oz) package taco seasoning mix .
  • 1 tbsp sugar .
  • 1 lb lean ground beef .
  • 1 tsp dry oregano .
  • 1 1/4 c pre-shredded mozzarella cheese .
  • 1 (6 oz) can tomato paste .
  • 3 soft taco-size flour tortillas .
  • 1 minced garlic clove

Directions
  • Step #1 Preheat oven to 375 degrees.
  • Step #2 Brown & drain ground beef in nonstick skillet.
  • Step #3 Return to pan, tomato paste, stir in the garlic, tomatoes, water, sugar, taco seasoning, & add salt & pepper to taste.
  • Step #4 Bring to a boil stirring every once in awhile.
  • Step #5 Reduce heat & let simmer uncovered for 15 mins.
  • Step #6 In a separate bowl mix the egg, cottage & parmesan cheeses, & oregano.
  • Step #7 Spray a round casserole dish (taco size) with non-stick cooking spray.
  • Step #8 Place one taco in the bottom of the pan.
  • Step #9 Top with 1/2 of the cheese mixture 1/2 of the meat mixture & 1/3 of the mozzarella.
  • Step #10 Repeat with the second tortilla, layering on the rest of the cheese mixture, & 1/2 of the remaining meat & mozzarella cheese.
  • Step #11 Top with the last tortilla, meat sauce, & mozzarella cheese.
  • Step #12 Bake uncovered until hot & bubbly, about 30 mins.
  • Step #13 Let stand 15 mins before serving.
