Fresh Corn And Tomato Salad Recipe

Ingredients
  • 6 ears fresh corn, husked (about 4 c corn kernels) .
  • 1 1/2 c fresh basil leaves .
  • 1/4 c extra-virgin olive oil .
  • 8 oz fresh mozzarella cheese, cut into small cubes .
  • 2 tsps kosher salt .
  • 3 tbsps white wine vinegar .
  • 1 bunch scallions, thinly sliced (white & green) .
  • fresh ground black pepper .
  • 2 c grape tomatoes, halved

Directions
  • Step #1 Whisk the vinegar, salt, & pepper in a small bowl.
  • Step #2 Gradually whisk in the oil, starting with a few drops & then adding the rest in a steady stream, to make a smooth dressing.
  • Step #3 Shear off the corn kernels with a sharp knife over a bowl.
  • Step #4 Toss in the tomatoes, scallions, & mozzarella.
  • Step #5 Pour the vinaigrette over the salad & toss to coat.
  • Step #6 Cover up & let set for 15 mins or up to 2 hrs.
  • Step #7 Before serving tear the basil over the salad & stir.
