Creamyegan Corn Chowder Recipe

Ingredients
  • 2 1/2 c water
  • 1 tsp dried parsley
  • 1 tsp garlic powder
  • 1 c celery, sliced
  • 2 c corn
  • 1 small onion, sliced
  • 1 c carrots, sliced
  • 2 cubes vegetable bouillon
  • 1 tsp pepper
  • 2 tbsps olive oil
  • 1 clove garlic, minced
  • 2 c soy milk
  • 1 tbsp flour
  • 1 tsp salt

Directions
  • Step #1 Heat oil in a large skillet over med-heat/flame.
  • Step #2 Stir in onions & celery; cook this until just slightly golden.
  • Step #3 Stir in carrots & garlic; cook this until garlic is slightly golden.
  • Step #4 Meanwhile, bring water to a boil over high heat.
  • Step #5 Stir in bouillon, & reduce heat to medium.
  • Step #6 When bouillon cubes have dissolved, add corn & the vegetables from the skillet.
  • Step #7 Cook until vegetables are tender.
  • Step #8 Add water, if necessary.
  • Step #9 Reduce heat to low, & pour in 1 c soy milk.
  • Step #10 Stir soup well, then stir in the remaining 1 c soy milk.
  • Step #11 Quickly whisk in flour.
  • Step #12 Stir in parsley, salt, garlic powder, & pepper.
  • Step #13 Cook, stirring constantly, until chowder thickens, about 15 to 20 mins.
