Brushcetta Pizza Recipe

Ingredients
  • fresh ground black pepper, to taste .
  • 2-3 mushrooms, sliced .
  • 10 mini bocconcini, each cut in half .
  • 1/2 c swiss cheese, shredded .
  • 1 small onion, minced .
  • 2-3 tbsps olive oil .
  • 1/2-3/4 c pizza sauce .
  • 1 tbsp sliced dried chives .
  • 10 cherry tomatoes, cut in half .
  • 1 tbsp rubbed basil .
  • 1/4 c reduced-fat feta cheese, crumbled .
  • 1 ready made thin pizza crust .
  • 1/2 c mozzarella cheese, shredded .
  • 1/2 c sliced turkey bacon or chicken bacon

Directions
  • Step #1 Preheat oven to 350 degrees F.
  • Step #2 Spread the pizza sauce on the pizza.
  • Step #3 It seems like it's not a lot of sauce, but the juice from the tomatoes adds to the sauce later.
  • Step #4 In a separate bowl, onion, chives, mix the sliced tomatoes with the basil, pepper & olive oil.
  • Step #5 (When I first made this, I actually used 7 cherry tomatoes & one small-medium sized yellow tomato, keep all the juice & seeds from when you cut it).
  • Step #6 Arrange the mushrooms on the pizza, followed by the halved bocconcini cheese, then the bacon, & the tomato mixture.
  • Step #7 Top it off with the crumbled feta, then the swiss then the mozzarella cheeses.
  • Step #8 Bake for about 10 mins until just melted, then switch the oven to broil until the cheese is beginning to brown.
  • Step #9 Shut the oven off & leave the pizza to sit for about 2 more mins in the oven before you remove it.
  • Step #10 Slice it up & enjoy! My husband wants it with green or hot peppers next time, but I don't like them myself.
