Cooked Carrot Salad Recipe

Ingredients
  • 2 tbsps olive oil .
  • 1/2 tsp ground cumin .
  • 2 tbsps red wine vinegar .
  • 1 tbsp parsley, minced (flat leafed variety) .
  • 1 c water .
  • salt .
  • 1 garlic clove .
  • 8 carrots .
  • pepper, freshly ground .
  • 1/2 tsp paprika

Directions
  • Step #1 Wash, scrape & slice carrots into 1/4 inch thick rounds.
  • Step #2 Bring water to a boil in a heavy saucepan.
  • Step #3 Add carrots & garlic, & cook about 15 mins, cover, or until tender (but still firm).
  • Step #4 Drain carrots & place this in serving bowl.
  • Step #5 Mix remaining ingredients & pour over the carrots.
  • Step #6 Toss, then cover with plastic wrap & set aside for about 30 mins before serving at about room temp.
