Crystal's Chicken Saltimbocca Recipe

Ingredients
  • 1 (10 oz) package frozen sliced spinach, thawed & drained well
  • 1 1/2 c dry white wine
  • 1/2 c freshly grated Parmesan cheese
  • 8 skinless, boneless chicken breast halves - lbed thin
  • 8 slices provolone cheese
  • 3 tbsps olive oil, divided
  • 8 slices thinly sliced prosciutto
  • salt & black pepper to taste

Directions
  • Step #1 Brush each chicken cutlet with olive oil & season this with salt & pepper.
  • Step #2 Squeeze excess water out of the frozen spinach, then season this with olive oil, salt, & pepper.
  • Step #3 Place 1 piece of prosciutto, 1 piece of provolone, & a thin layer of spinach on each chicken cutlet.
  • Step #4 Then sprinkle Parmesan over the tops.
  • Step #5 Beginning at the short, roll up each chicken cutlet, tapered end, & secure with a toothpick.
  • Step #6 Heat 2 tbsps olive oil in a large skillet over med-heat/flame.
  • Step #7 Place chicken in the skillet, then pour in wine.
  • Step #8 Cook, & the chicken is cooked through & its juices run clear, until the wine evaporates, turning the chicken, about 20 mins.
