Ingredients
1 (10 oz) package frozen sliced spinach, thawed & drained well
1 1/2 c dry white wine
1/2 c freshly grated Parmesan cheese
8 skinless, boneless chicken breast halves - lbed thin
8 slices provolone cheese
3 tbsps olive oil, divided
8 slices thinly sliced prosciutto
salt & black pepper to taste
Directions
Step #1 Brush each chicken cutlet with olive oil & season this with salt & pepper.
Step #2 Squeeze excess water out of the frozen spinach, then season this with olive oil, salt, & pepper.
Step #3 Place 1 piece of prosciutto, 1 piece of provolone, & a thin layer of spinach on each chicken cutlet.
Step #4 Then sprinkle Parmesan over the tops.
Step #5 Beginning at the short, roll up each chicken cutlet, tapered end, & secure with a toothpick.
Step #6 Heat 2 tbsps olive oil in a large skillet over med-heat/flame.
Step #7 Place chicken in the skillet, then pour in wine.
Step #8 Cook, & the chicken is cooked through & its juices run clear, until the wine evaporates, turning the chicken, about 20 mins.
