Breast Of Chicken In Red Wine Sauce
Ingredients
4 chicken breast halves, on the bone skin on .
salt & freshly ground black pepper .
1/4 c honey .
1/2 tsp chili powder .
2 tbsps minced garlic .
1/2 tsp ground cumin .
1/2 tsp hot paprika .
1/4 c fresh lemon juice .
1/4 c olive oil .
1 c plain yogurt .
1/2 tsp sweet paprika .
1/4 c cilantro, sliced .
1/2 c tahini .
salt & freshly ground black pepper, to taste .
Tahini-Yogurt Sauce .
cayenne, to taste
Directions
Step #1 Preheat the oven to 425F degrees.
Step #2 Mix 2 tbsps of the olive oil & the spices in a small bowl.
Step #3 Put the chicken & spices in a mixing bowl & toss.
Step #4 Spice up with salt & pepper to taste.
Step #5 Put the remaining 2 tbsps olive oil in an ovenproof skillet over med-heat/flame.
Step #6 Brown the chicken 1½ to 2 mins on the meaty side, then turn & brown for 3 to 4 mins on the skin side.
Step #7 Pour out any excess oil.
Step #8 Transfer the skillet to the oven & cook for about 30 mins, or until the chicken is just cooked through.
Step #9 Serve with Tahini-Yogurt Sauce.
Step #10 Tahini-Yoghurt Sauce:.
Step #11 Mix tahini, lemon juice, garlic, cilantro, yogurt, & honey together in a bowl.
Step #12 Spice up with salt, pepper, & cayenne to taste.
Step #13 Serve at about room temp.
Step #14 Refrigerate if not using as soon as possible, but this sauce should not be kept more than 24 hrs.
