Low Carb Mexican Chicken Recipe

Ingredients
  • 2 tbsps tomato paste .
  • 2 tsps minced garlic .
  • 1 tsp adobo seasoning .
  • 1 tsp black pepper .
  • 1/2 tsp chili powder .
  • 1 (15 1/2 oz) can black beans, drained .
  • shredded cheddar cheese (optional) .
  • sour cream (optional) .
  • 1 c chicken broth .
  • 2 lbs boneless skinless chicken thighs, fat trimmed .
  • 1/3 tsp chili flakes .
  • 1/2 tsp cumin .
  • 1 (4 oz) can sliced green chilies, drained .
  • 1 tbsp olive oil .
  • 1 medium onion, sliced .
  • 2 green bell peppers, sliced

Directions
  • Step #1 Add first eleven ingredients (tomato paste through bell peppers) to the slow cooker (aka crockpot) crock & mix well.
  • Step #2 Add chicken thighs & stir well to coat chicken with seasonings; then add black beans & chilis; do not stir.
  • Step #3 Cover up & cook on LOW for 8 hrs.
  • Step #4 Before serving, stir thoroughly.
  • Step #5 Serve with chedder cheese & sour cream, if desired.
