Cowboy Beans Recipe

Ingredients
  • 2 garlic cloves, minced .
  • 1/2 lb thick slab bacon, cut into 1 in. cubes or 1 lb ham hocks .
  • 1 1/2 tsps chili powder .
  • 1/2 sweet bell pepper, seeded & sliced .
  • 1 medium onion, sliced .
  • 1/4 tsp red pepper flakes .
  • salt, to taste, after beans are cooked .
  • 1/2 tsp black pepper .
  • 1 (16 oz) canned whole tomatoes, cut up, with juice .
  • 1 jalapeno, sliced .
  • 1 (12 oz) bottle beer .
  • 1 lb pinto beans

Directions
  • Step #1 Soak the beans overnight in lots of cold water.
  • Step #2 Drain off the soaking water.
  • Step #3 Put beans in a very large pot.
  • Step #4 Pour in the beer & enough fresh water to come up 2 inches over the beans.
  • Step #5 Add remaining ingredients except salt.
  • Step #6 Cover up, heat to a boil, reduce heat to very low - just enough to bubble the liquid a little.
  • Step #7 Simmer until beans are tender, 2 to 3 hrs.
  • Step #8 If using ham hocks, remove, discard bones, chop & return to pot.
  • Step #9 Add salt to taste.
  • Step #10 Note1: I've noted the comment regarding the time - lately, I've made this by dumping it all in the crockpot & cooking for however long, 9 to 10 hrs I suppose.
  • Step #11 I'll try to do it on the stovetop next time & check time.
