1/4 tsp ground red pepper, finely minced (depends on how hot you want the soup) or 1 small jalapeno, finely minced .
basmati rice or brown basmati rice, cooked .
1/2 tbsp freshly grated ginger .
1/2 tsp ground coriander .
sliced cilantro leaves (to garnish) .
1 tsp curry powder, to taste .
1 1/2 c yams, peeled & cut into 1-inch cubes .
1 tbsp peanut oil
Directions
Step #1 While the rice is cooking, melt the butter or ghee & the peanut oil over med-heat/flame & brown the yams until golden on all sides, In a large-ish saute pan, about 10-12 mins & until fork tender.
Step #2 Next add the onions & brown until softened.
Step #3 Add the curry powder, fresh ginger, red pepper, coriander, & mango; stirring well to coat.
Step #4 Heat through.
Step #5 Spice up with salt to taste.
Step #6 Arrange the rice on a large serving platter & top this with the yam/mango mixture.
Step #7 Garnish with sliced cilantro leaves.
Step #8 Cooking time does not include cooking the rice.
