Chow Chowi Recipe

Ingredients
  • 8 c fresh green beans
  • 8 c green tomatoes, sliced
  • 3 c fresh corn kernels
  • 1 tbsp ground turmeric
  • 4 c sliced onions
  • 4 c white sugar
  • 3 quarts cider vinegar
  • 1/2 c salt
  • 3 c fresh lima beans, shelled
  • 1 large head cauliflower, separated into florets
  • 2 tbsps mustard seed
  • 2 tbsps celery seed
  • 5 green bell peppers, sliced
  • 2 tbsps ground mustard

Directions
  • Step #1 Bring a large pot of water to a boil.
  • Step #2 Add green beans, cauliflower, lima beans, & corn.
  • Step #3 Cook for 5 to 8 mins or just until tender; drain.
  • Step #4 Return vegetables to pot, bell peppers, & mix in onions, & green tomatoes.
  • Step #5 Heat vinegar in a saucepan until boiling.
  • Step #6 Spice up with salt, mustard seed, celery seed, ground mustard, & ground turmeric.
  • Step #7 Pour over vegetables in pot, & bring to a boil.
  • Step #8 Simmer 20 to 25 mins, stirring every once in awhile.
  • Step #9 Pour into 12 sterilized pint jars, & seal.
