Wickaninnish Bread Recipe

Ingredients
  • 1 tbsp olive oil .
  • 1/2 c honey .
  • 1/2 tsp minced ginger .
  • 1/2 tsp cracked pepper .
  • 2 tbsps sliced cilantro .
  • 1 1/2 c fresh crabmeat .
  • 1 tbsp baking powder .
  • 1/3 c milk .
  • 3 tsps water .
  • 4 c salal berries .
  • 2 c white wine .
  • 1 1/4 c bread flour .
  • 1 tbsp fresh herbs, sliced .
  • 1 tsp cornstarch, dissolved in .
  • 1 tsp sea salt .
  • 1 tbsp garlic, minced .
  • 2 c orange juice .
  • Apple Reduction .
  • 1 white onion, sliced .
  • 1 peeled grilled & sliced granny smith apples .
  • 3 eggs .
  • 1/2 c soft butter .
  • Salal Berry Compote .
  • 6 c apple juice .
  • 2 tbsps granulated sugar

Directions
  • Step #1 Preheat oven to 350 degrees F.
  • Step #2 Combine butter & sugar in the bowl of an electric mixer & whip until pale yellow.
  • Step #3 Mix in eggs one at a time.
  • Step #4 Mix in one half the flour & the baking powder.
  • Step #5 Add the milk.
  • Step #6 Mix in the remaining flour.
  • Step #7 Add herbs, apple, crab, salt, pepper, & ginger.
  • Step #8 Butter six ramekins & fill each with batter.
  • Step #9 Bake for approximately 20 mins.
  • Step #10 Serve with Apple Reduction & Salal Berry Compote.
  • Step #11 Apple Reduction Reduce apple juice to approximately 1/4 c.
  • Step #12 Thicken with cornstarch mixed with water, if necessary.
  • Step #13 Salal Berry Compote.
  • Step #14 Saute onions & garlic in olive oil until soft.
  • Step #15 Add white wine, orange juice, & honey & reduce until almost dry.
  • Step #16 Add salal berries & cook at medium heat until berries start to break apart.
  • Step #17 Spice up with salt & pepper.
  • Step #18 Add cilantro & cool.
