Summer Blueberry Tart Recipe

Ingredients
  • 1/2 c chilled butter, cut into small pieces .
  • 2 tbsps sugar .
  • 1 1/2 c flour .
  • Sweet Pastry Crust .
  • 1/3 c sugar .
  • 1-2 tbsp cold water .
  • 2 tbsps water .
  • 1 tbsp fresh lemon juice .
  • 1/2 pint heavy cream, whipped (optional) .
  • 5 c blueberries (fresh or frozen) .
  • 1 tbsp cornstarch, dissolved in 2 Tbsp water .
  • 1 egg yolk .
  • Filling .
  • Topping

Directions
  • Step #1 For the pastry crust: Stir the flour & sugar together in a mixing bowl.
  • Step #2 Cut the chilled butter into small pieces & drop then into the flour.
  • Step #3 With your fingers, quickly rub the butter into the flour until it becomes crumbly, or cut in with a pastry cutter.
  • Step #4 Whisk together the egg yolk, lemon juice & 1 Tbsp water.
  • Step #5 Sprinkle top the liquid over the crust mixture & continue to mix with your fingers until a dough ball forms.
  • Step #6 Be careful not to overwork the dough.
  • Step #7 If mixture is too dry, add up to one more tbsp of water.
  • Step #8 On a floured board with a floured rolling pin, roll out dough into large circle.
  • Step #9 Gently lift into a 9-10 inch pie plate or tart tin.
  • Step #10 Trim the edges, patch any holes, & flute the crust.
  • Step #11 Chill for 2 hrs.
  • Step #12 Preheat oven to 375°F.
  • Step #13 Place a sheet of aluminum foil wrap in the bottom of the crust & weigh it down with some dry rice or beans.
  • Step #14 Bake for 15 mins.
  • Step #15 Remove the crust from the oven & carefully lift out the foil wrap & beans or rice.
  • Step #16 Bake for 5 more mins; then cool.
  • Step #17 To make the filling, heat 2 c blueberries, 2 Tbsp water & the sugar in a small saucepan.
  • Step #18 Crush a few berries with a spoon to relese some juice.
  • Step #19 When the berries have softened & become juicy, add the cornstarch mixture.
  • Step #20 Simmer on low heat for 10 mins, stirring every once in awhile until the mixture thickens.
  • Step #21 Remove from the heat & stir in the one more c of blueberries.
  • Step #22 Pour the berry mixture in to the pie shell.
  • Step #23 Top with the remaining 2 c of blueberries.
  • Step #24 Cool for at least one hr.
  • Step #25 Serve plain or topped with fresh whipped cream.
