Red Lentil And Watercress Salad Recipe

Ingredients
  • 2 garlic cloves, finely minced .
  • 2 c watercress, rough sliced .
  • 4 c water .
  • salt & pepper .
  • 1 tbsp extra virgin olive oil .
  • 1/4 tsp dried oregano (Greek if you have it) .
  • 1 c red lentils .
  • 1 1/4 tsps Dijon mustard .
  • 2 1/2 tbsps balsamic vinegar .
  • 1 onion, sliced .
  • 2 carrots, sliced

Directions
  • Step #1 Place red lentils in a colander & pick out any stray bits.
  • Step #2 Rinse with water & drain.
  • Step #3 Place lentils,in saucepan with water.
  • Step #4 Bring water to a boil & reduce to a simmer.
  • Step #5 Let lentils simmer 5 mins then add onions, carrots & let simmer an extra 10 mins until lentils are tender.
  • Step #6 Drain but do not rinse the lentils, carrots & onion.
  • Step #7 While the lentils are simmering whisk together the vinegar, oil, mustard & garlic In a large-ish bowl.
  • Step #8 Spice up with salt & pepper to taste.
  • Step #9 Once the lentils are drained, add watercress & lentils to the dressing & toss until well coated.
  • Step #10 Serve as soon as possible.
