Fried Fruit With Bay Leaf Sauce Recipe

Ingredients
  • 1/2 c flour .
  • For topping .
  • 6 fresh bay leaves .
  • 1/3 c milk .
  • 2/3 c milk .
  • Batter .
  • 1-2 c purple grapes .
  • 10 fresh sage leaves .
  • oil (for deep frying) .
  • Fruit & Sage .
  • 1 tbsp sunflower oil .
  • 1/4 tsp cinnamon, ground .
  • 1-2 c red currants .
  • Bay Leaf Sauce .
  • 1 egg .
  • 4 egg yolks .
  • 1 c whipped cream .
  • sugar .
  • For Frying .
  • 2 tbsps sugar .
  • 1 tbsp sugar .
  • 1 pinch nutmeg

Directions
  • Step #1 Sauce (can be prepared in advance): mix all ingredients in a small pot.
  • Step #2 Heat on medium high heat & stir all the time.
  • Step #3 The mixture will thicken during heating to a temperature of about 175 F (80 C).
  • Step #4 It is important that during heating the mixture will constantly be stirred.
  • Step #5 Do not let the sauce boil.
  • Step #6 The sauce has the right conistency, if it builds a thick film on the backside of a tbsp.
  • Step #7 Remove sauce from heat & stir for 2 mins.
  • Step #8 Set aside & let cool down completely.
  • Step #9 Prepare berries: Wash small panicles of red currant & pat dry with paper towels.
  • Step #10 Wash grapes & cut into clusters of 3-5 berries.
  • Step #11 In a suited pot or deep fryer heat about 2 inches high oil for frying.
  • Step #12 Combine flour, sugar, ground nutmeg & ground cinnamon.
  • Step #13 Mix egg, milk & 1 tbsp oil.
  • Step #14 Add to flour mixture & beat until smooth.
  • Step #15 Dip berries & sage leaves into batter.
  • Step #16 Fry berries in hot oil for about 1 min or until batter is light golden brown.
  • Step #17 Fry sage leaves until batter is light golden brown & puffed up.
  • Step #18 Remove with slotted spoon; drain on paper towels.
  • Step #19 While still warm sprinkle the fired red currant berries & the sage leaves slightly with some sugar.
  • Step #20 Serve berries & sage leaves still warm with the cold bay leaf sauce.
  • Step #21 NOTE: You can replace the berries in this recipe against others of your choice, but use fresh ones.
  • Step #22 They should not be to sweet.
  • Step #23 Or choose a sweet & a more tart one.
  • Step #24 NOTE: I used fresh bay leaves.
  • Step #25 If you have no fresh leaves, you can use dried ones, but you may have to use more leaves.
  • Step #26 Try the sauce during heating & add more leaves to your taste.
  • Step #27 The sauce should have a delicate vanilla taste & extra notes.
