Mashed Yam Casserole Recipe

Ingredients
  • 1/8 tsp ginger .
  • 1/4 tsp salt .
  • 3 tbsps butter .
  • 1/8 tsp nutmeg .
  • 3/4-1 c light sour cream .
  • 4 large yams, peeled & cut into chunks (about 3 lbs) .
  • 1 very ripe banana .
  • 1/8 tsp cinnamon .
  • 1 tbsp butter, melted

Directions
  • Step #1 Preheat oven to 350.
  • Step #2 Lightly spray a 2 quart casserole dish with nonstick cooking spray.
  • Step #3 Boil yam chunks in salted water until tender (about 10-15 mins, depending on the size of your chunks).
  • Step #4 Drain.
  • Step #5 Place cooked, drained yam chunks In a large-ish bowl.
  • Step #6 Add banana.
  • Step #7 Mash together with a potato masher.
  • Step #8 Add 3 tbsp butter & the sour cream.
  • Step #9 Mash to mix well.
  • Step #10 Mash in the salt, cinnamon, ginger & nutmeg.
  • Step #11 Place mashed mixture into prepared casserole dish.
  • Step #12 Evenly drizzle with the 1 tbsp melted butter.
  • Step #13 Bake uncovered, at 350 for 20 mins or until top just begins to slightly brown.
