Apple Cheddar Potato Soup Recipe

Ingredients
  • 1/4 c white wine .
  • 1 large potato, peeled & sliced .
  • 2 tbsps flour .
  • 2 tbsps vegetable oil .
  • 1/4 tsp white pepper .
  • 3 tart apples, peeled, cored, & sliced .
  • 1/4 tsp ground thyme .
  • 2 stalks celery, sliced .
  • 3 1/2 c chicken broth or vegetable broth .
  • 1/8 tsp nutmeg .
  • 1/3 c milk .
  • 1/2 c heavy cream .
  • 3 1/2 c shredded cheddar cheese .
  • 1/4 c finely sliced onions

Directions
  • Step #1 In large saucepan, heat oil.
  • Step #2 Add apples, celery, potato, onion, & thyme.
  • Step #3 Saute 10 mins.
  • Step #4 Stir in wine & let simmer 2 mins; add broth & let simmer about 40-45 mins or until everything is very tender.
  • Step #5 Using a mixer or food processor/blender, puree soup mixture, but leave just a little bit lumpy.
  • Step #6 Return to saucepan.
  • Step #7 Over very low heat, stir in the cheese & cream.
  • Step #8 In a small bowl, whisk together milk & flour; add to soup & stir in theches Add nutmeg, & pepper.
  • Step #9 Cook just until heated through--do not boil or cheese will curdle.
  • Step #10 Serve.
