Raas Malai -- It's What To Do With Freshly Spoiled Milk! Recipe

Ingredients
  • 1/4 c sugar .
  • 2-3 cardamom .
  • 1/2 lemon .
  • 1/2 tbsp flour .
  • 1/2 tbsp rose extract, essense (optional) .
  • 4 c milk (preferably whole, at least 2%)

Directions
  • Step #1 Pour milk into pot & squeeze 1/2 lemon into the milk.
  • Step #2 Stir, & let it come to a boil.
  • Step #3 Let it cook for about 1/2 hr on medium-low heat to allow the curds & whey to seperate.
  • Step #4 Pour the contents of the pot through a very fine seive, or a linen cloth.
  • Step #5 After squeezing out excess liquid, the curds should have the consistency of slightly curmbley play-doh.
  • Step #6 If they are softer than that, it may help to put in the fridge the "curd-dough" for a few hrs.
  • Step #7 Mix in the flour with the curds, & make then into ball that are 1 in.
  • Step #8 - 1.
  • Step #9 5 inches in diameter.
  • Step #10 Pour 1/4 c water, 1/4 c milk, cracked cardomoms & mix in 4 tbsps sugar in the pot & keep it on low heat.
  • Step #11 Once the sugar has dissolved, carefully place your curd balls in the the sugar liquid, & let them absorb the mixture for about 15 mins.
  • Step #12 The pot's lid should be slightly ajar.
  • Step #13 Pour in more 1/2-3/4 c of milk into the pot, & stir.
  • Step #14 Take a taste, & add more sugar if needed.
  • Step #15 Add rose essense & put in the fridge for at least 2 hrs, preferably overnight.
