Step #1 Cook the potatoes In a large-ish pan of boiling, salted water for 3-4 mins.
Step #2 Drain well.
Step #3 Preheat the oven to 200°C
Meanwhile, heat the oil In a large-ish frying pan & cook the carrot & onion for about 1 min over a medium high heat, then add the lamb mince & stir fry until well browned.
Step #4 Pour in the hot stock & stir in the the brown sauce & soy sauce.
Step #5 Bring to the boil & let simmer rapidly for 3-4 mins.
Step #6 Mix the cornflour & a little water to a paste, & stir in theto the lamb mixture with the peas; bring back to the boil, stirring, until slightly thickened.
Step #7 Spice up with salt, pepper & Tabasco, to taste.
Step #8 Spoon the mince mixture into a heatproof dish & top this with overlapping slices of potato & tomato to cover the mince mixture completely.
Step #9 Sprinkle top over the grated cheese, if using.
