Ingredients

1 small onion, quartered & sliced
1 1/2 c shredded mozzarella cheese
2 medium tomatoes, cut into wedges
2 medium zucchini, quartered lengthwise & sliced
1 tsp salt
1 tsp Italian seasoning
1/2 tsp pepper

Directions

Step #1 In a greased 2-qt.
Step #2 microwave-safe dish, mix the zucchini, tomatoes & onion.
Step #3 Cover & microwave on high for 13 mins or until vegetables are tender, stirring three times; drain.
Step #4 Sprinkle top with Italian seasoning, salt, pepper & cheese.
Step #5 Cover & let this stand for 2-3 mins or until the cheese is melted.
