Jacksonroykirk's Potato Salad Recipe

Ingredients
  • 1 1/4 c mayonnaise .
  • 6 large eggs .
  • 1 tbsp apple cider vinegar .
  • 2 tsps yellow mustard .
  • 1 small dill pickles .
  • 2 stalks celery .
  • 1/2 medium green pepper .
  • 6 medium red potatoes .
  • 1 tsp salt .
  • 1/2 large red onion .
  • 1/2 tsp fresh ground pepper

Directions
  • Step #1 Boil potatoes whole with skins on for 20 - 30 mins In a large-ish pot until potatoes are fork tender.
  • Step #2 Set potaotes aside to cool for a few mins.
  • Step #3 While the potatoes are cooling, carefully put eggs in the same pot of hot water & boil them until hard boiled (10 - 15 mins).
  • Step #4 Useing a butter knife, scape off the skins of the red potatoes.
  • Step #5 When eggs are cooked, place them along with potatoes aside until they are cool.
  • Step #6 (Note: I frequently prepare the potatoes & eggs the day before & put them in the refrigerator.
  • Step #7 ).
  • Step #8 In a large bowl , mustard, vinegar, mix mayonaise, salt & pepper & mix well.
  • Step #9 Chop up onion, celery, pepper, pickle (finely sliced) & put in with the mayonaise mixture; stir well.
  • Step #10 Cube the potatoes & coarsely chop the eggs & toss with the rest of the mayonaise mixture.
  • Step #11 Put potato salad in the refrigerator for at least an hr for the mixture to cool off & the flavors to mix.
