Split Pea And Rice Soup Recipe

Ingredients
  • 1/2 tsp ground cardamom .
  • salt & pepper .
  • 1/4 c fresh parsley, sliced .
  • 3 c water .
  • 1/4 c olive oil .
  • 2 c vegetable stock .
  • 1 tsp ground cumin .
  • 1/2 tsp cinnamon .
  • 2 c onions, sliced .
  • 2 bay leaves .
  • 2 large garlic cloves, minced .
  • 1 c dried split peas .
  • 2 tsps fresh lemon juice .
  • 1/2 c cooked rice .
  • 1/4 tsp cayenne

Directions
  • Step #1 Rinse the peas.
  • Step #2 Put them in a soup pot with 3 c of water & bring to a boil.
  • Step #3 Reduce heat, cover, & let simmer for 45-60 mins.
  • Step #4 Meanwhile, saute the onions & garlic in olive oil until onions are translucent.
  • Step #5 Mix in the spices & saute for 5-10 mins, stirring frequently to prevent burning.
  • Step #6 Set aside.
  • Step #7 When peas are cooked, stir in the the onion mixture along with the stock.
  • Step #8 Add the lemon juice & cooked rice & season this with salt & pepper.
  • Step #9 Stir in the parsley & carefully reheat.
