Festive Shrimp Creole Recipe

Ingredients
  • 3 medium celery ribs, thinly sliced .
  • 1 (8 oz) bottle clam juice .
  • 1 (28 oz) can sliced tomatoes .
  • 2 tbsps lime juice .
  • 3 garlic cloves, sliced .
  • cooked rice .
  • 1/2 tsp hot pepper sauce .
  • 1-2 green pepper or red pepper, thinly sliced .
  • 1 large onion, cut in half & thinly sliced .
  • 2 lbs shrimp, shelled & deveined .
  • 6 slices bacon

Directions
  • Step #1 In 12 inch skillet, cook bacon over med-heat/flame until browned, stirring often.
  • Step #2 Remove bacon to paper towel to drain.
  • Step #3 To bacon fat in skillet, add garlic, celery, peppers & onion & cook over med-heat/flame uncovered for about 15 mins or untill vegetables are very tender.
  • Step #4 Stir in tomatoes & clam juice; heat to boiling over high heat & reduce to medium & cook about 30 mins or until liquid reduces.
  • Step #5 It depends on your taste as to how juicy you want this.
  • Step #6 Stir shrimp into vegetable mixture & cook 5 mins or until shrimp turn opaque throughout, stirring frequently.
  • Step #7 Stir in lime juice, hot pepper sauce & crumbled bacon.
  • Step #8 Serve over a bed of fluffy rice.
