Chicken With Peanut Sauce Recipe

Ingredients
  • 1 c ground peanuts (or 250 g) .
  • 2/3 c oil (peanut oil is usually used, or 150 cc) .
  • hot black pepper .
  • 2 oz onions, finely sliced (or 50 g) .
  • salt & pepper .
  • 1 chicken, cut into serving pieces .
  • 20 oz ripe tomatoes, peeled, seeded & finely sliced (or 500 g)

Directions
  • Step #1 Brown chicken in half the oil.
  • Step #2 Heat the rest of oil In a large-ish pot, & add tomatoes, mashing them.
  • Step #3 Add onions, hot pepper powder, salt, & black pepper.
  • Step #4 Cook 15 mins, then add chicken.
  • Step #5 Thin peanut paste slightly with about 1 c/250 cc of water, & add to chicken, mixing well.
  • Step #6 Add more hot pepper to taste.
  • Step #7 Cook, covered, over med-heat/flame for 20 mins or until chicken is done.
  • Step #8 Sauce should be thick.
  • Step #9 Served with steamed rice.
