Ingredients
4 scallions, sliced .
5 oz gorgonzola (not just any old bleu) .
2 garlic cloves, minced .
1 bunch fresh chives, sliced .
1 lb mushrooms, sliced .
4 oz walnuts, sliced .
salt, pepper to taste .
10 oz tagliatelle pasta noodles .
1 c sour cream .
4 oz bacon, sliced small .
1 small onion or shallot, finely sliced .
1 bunch parsley, sliced
Directions
Step #1 Fry the bacon on a mid-low heat until crisp but not burnt, then add the onion & garlic & saute until softened.
Step #2 Fry the mushrooms separately until most of the water is out of them.
Step #3 Heat the Gorgonzola carefully in a pot with the sour cream.
Step #4 Add a little cream if desired, then add walnuts.
Step #5 Boil the tagliatelle.
Step #6 When the noodles are done, add 2/3 of all the "green stuff" (parsley, chives & scallions) to the sauce.
Step #7 In a large bowl, garlic, onion, carefully mix pasta with bacon, mushrooms & sauce.
Step #8 Sprinkle top remaining green stuff over pasta before serving.
