Chocolate Pudding With Meringue Recipe

Ingredients
  • 3 tbsps white sugar
  • 1 c evaporated milk
  • 3 tbsps white sugar
  • 1 pinch salt
  • 1 tbsp unsweetened cocoa powder
  • 1 (1 oz) square unsweetened chocolate, sliced
  • 3 eggs, separated

Directions
  • Step #1 Preheat oven to 325F degrees F (165 degrees C).
  • Step #2 Butter a 1 quart baking dish or pudding basin.
  • Step #3 Melt chocolate over low heat/flame in small saucepan.
  • Step #4 Stir in milk & heat through.
  • Step #5 Remove from heat & let cool slightly.
  • Step #6 In a medium bowl, beat eggs.
  • Step #7 Beat in 3 tbsps sugar & salt.
  • Step #8 Beat in chocolate mixture.
  • Step #9 Pour into prepared dish.
  • Step #10 Line a roasting pan with a damp kitchen towel.
  • Step #11 Place baking dish on towel, inside roasting pan, & place roasting pan on oven rack.
  • Step #12 Fill roasting pan with boiling water to reach halfway up the sides of the baking dish.
  • Step #13 Bake in preheated oven 30 mins, until set.
  • Step #14 In a clean, dry bowl, beat egg whites until stiff.
  • Step #15 Beat in 3 tbsps sugar & cocoa.
  • Step #16 Spoon meringue over baked pudding & return pudding to oven to brown meringue, 2 to 8 mins.
