Spaghetti Sauce Recipe

Ingredients
  • 4 tbsps italian seasoning .
  • 1/4 c pickling salt .
  • 3 green peppers, seeded & sliced .
  • 2 (10 oz) cans mushroom stems & pieces, drained .
  • 1 bunch celery, sliced (leaves included) .
  • 4 tbsps dried sweet basil leaves .
  • 2/3 c sugar .
  • 20 c skinned & sliced tomatoes (I use Roma) .
  • 2 (43 g) packages spaghetti sauce mix .
  • 2 (13 oz) cans tomato paste .
  • 1 (1 3/4 liter) jar Prego spaghetti sauce, original .
  • 8 c tomato juice .
  • 6 garlic cloves, finely sliced .
  • 2 large onions, sliced

Directions
  • Step #1 In a large stock pot add tomatoes, onions, peppers, tomato juice, celery, garlic, mushrooms, sweet basil & Italian seasoning.
  • Step #2 Simmer, stirring every once in awhile, over med-heat/flame for 30 mins.
  • Step #3 Add sugar & salt & let simmer 15 - 30 mins longer, reducing liquid.
  • Step #4 Add spaghetti sauce, tomato paste & spaghetti sauce mix.
  • Step #5 Taste, add more seasonings if desired.
  • Step #6 Ladel into sterile pint or quart jars, leaving 1/2 inches head space.
  • Step #7 Process 10 mins in hot water bath.
  • Step #8 *I use Mom's Pantry Italian seasoning, but you can use any Italian seasoning containing basil, rosemary, oregano & thyme.
  • Step #9 I do not do any chopping in a food processor/blender, I do all of it by hand.
  • Step #10 I use heaping tbsps for the sweet basil & the Italian seasoning.
